When it comes to dessert, I reach for a chocolate concoction 99% of the time.  So, in order for me to consume a non-chocolate treat it has to taste good.  Husband was jonesing for a refreshing and cool dessert after his surgery and limes have been on my mind lately.  I have frequent dreams of the amazing lime dessert we had last year during our stay at an ocean-side inn in Virginia.  After a few failed attempts I think this recipe is a near replica.  The tartness of the citrus combined with the creaminess in the mousse creates the perfect balance for an utterly delicious and satisfyingly rich dessert.  My dreams just came true.
